Chinese crispy noodles

This is what I am preparing for lunch & since it's a fav in my house I waned 2 share it with u all. It is worth a try.

Ingredients non vegetarian 4 servings


    • 1/2 pack rice stick noodles.
    • oil for deep frying
    • 2 tbsp oil
    • 2 cloves ginger crushed
    • 2 chicken breast/ 1/4 lb beef cut into thin strips.
    • 1 carrot semi thin cut (Chinese style)
    • 1/2 cup dry Chinese mushrooms(soaked in water for 20 min) or 1/2 c Chinese mushroom can drained.
    • 1 bell pepper cut Chinese style
    • 5-6 broccoli florets
    • 1/2 cup baby corn (cut Chinese style)
    • 1 onion cut into large cubes
    • 2 tbsp soy sauce*
    • 2 tbsp oyster sauce*
    • salt if desired (adjust 2 ur taste)*
    • 1 tsp chilli*
    • 1 tsp fish sauce*
    • 1/4 tsp black pepper*
    • 1 cup chicken stock*
    • 1 tbsp heaped corn flour*.
    • 1/4 cup chopped spring onion

    Directions

    1. In a cup mix all the star items and set aside.
    2. Heat oil for deep frying.
    3. Take batch full of rice sticks & fry till crisp and remove on an absorbent kitchen towel.
    4. Mean while, heat oil in a wok and add ginger and fry for few sec until the aroma is felt.
    5. Add chicken/beef  strips and stir fry for 5.
    6. Add in the Onion, bell pepper & stir fry for a min then add carrots, broccoli, baby corn and mushrooms and fry for another 3 min.
    7. Pour in the sauce mix and allow it to thicken.
    8. remove from heat.
    9. Pour the sauce over the fried rice stick noodles and sprinkle some spring onion.
    10. Serve hot and enjoy this lovely dish.


    * For this dish u can use other veggies cut in ur style and even egg noodles, it is all up to the individual.And since soy & oyster sauce both have high sodium I kept the salt part opt.
