Recipe by Vedika Hemnani of Melbourne, AU

An amazing log shaped cake that needs no baking but tastes just as good.

Ingredients vegetarian 4 servings

    • 1 pkt tea-time biscuits (round in shape Marie, McVities Rich tea, etc.)
    • 2 tsp coffee powder
    • 500 gm butter
    • 3-4 tbsp cocoa powder
    • 1/2 cup sugar
    • 2 tbsp white flour(Maida)
    • 1 cup water

    Directions

    1. Make coffee decoction by boiling the coffee powder with the water. Allow this mixture to cool down until warm. Mix in one tbsp white flour.
    2. Make a creamy chocolate paste by mixing the butter, sugar, cocoa powder. Mix using a fork or a spoon until the taste is even and chocolaty. To this add 1 tbsp of White flour.
    3. Dip one biscuit in the coffee decoction and place on a long oval plate or tray.On this biscuit, spread the chocolate paste in an even layer. Now dip the next biscuit and place on top of the chocolate layer. Now apply the chocolate layer on this one.
    4. Continue the above step for all the biscuits.
    5. Apply the remaining chocolate paste along the length of the tower of the biscuits, covering the whole structure with the chocolate paste.
    6. When the whole tower is ready, hold both the ends and make it lie on the plate like a sleeping log. Now on the two ends of the log apply the chocolate paste.
    7. Use your fingers to apply the chocolate in step 5 and 6 to give it designs like on a wood log.
    8. Freeze the choco-log for 5 hours  or more, preferably overnight .
    9. While serving, slice the log diagonally (hold the knife at 45 degrees to the table)in the required thickness.
    10. Can be served by itself or with ice-cream , fruits or whipped cream.
