Nutri khichdi

Ingredients vegetarian 2 servings


    • 1 cup rice
    • 1/2 cup moong dal
    • 1 cup beans
    • 1 cup cauliflower
    • 1 cup peas
    • 1 cup potatoes
    • 1 cup capsicum
    • 1 tsp jeera
    • 2 tbsp coconut milk powder
    Grind:
    • coriander leaves
    • pudina leaves
    • green chillis
    • ginger
    • salt to taste
    • oil - 2 tbsp

    Directions

    1. Wash and soak rice and dal for 10 minutes. Heat oil in a cooker.
    2. Add oil,when its hot, add jeera,when it splutters add cubed vegetables,and ground paste of chillis,ginger,coriander and pudhina.
    3. Fry well,add drained dal and rice,salt to taste,coconut milk powder mixed in little warm water and mix.
    4. Add 2 cups of water(preferably hot),stir and cover the lid and keep for 1 whistle.
    5. Garnish with coriander leaves and serve hot with onion or cucumber raitha.
    6. This khichdi is very nutritious and tastes equally good without oil also.
    7. Whole moong can be substituted in place of moong dal in which case whole moong should be soaked for 4hours.
