Potato delight

Typical UP fare made without onions or garlic

Ingredients vegetarian 2 servings

    • 4 large potatoes cubed
    • 5 medium tomatoes diced
    • 4 green chillies chopped fine
    • 1 inch piece ginger peeled and chopped fine
    • 1/2 tsp turmeric
    • 1/4 hing
    • 1/2 tsp jeera
    • Salt to taste
    • 1 tbsp pure ghee



    1. Put the cubed potatoes and diced tomatoes with salt and turmeric and 1 cup water in a pressure cooker and cook till potatoes are soft but retain their shape.
    2. In a wok, heat the ghee, now add all the rest of the ingredients one by one to make the tadka - add jeera, hing, ginger and green chillies
    3. Pour the mixture of potatoes and tomatoes from the pressure cooker into the wok and bring to a boil letting some of the liquid evalporate on high heat.
    4. The end result should be potatoes in a viscous gravy (not thin)
    5. Serve hot with rotis or parathas.
