Grilled Prawns Starters

A very Simple yet delicious recipe

Ingredients non vegetarian 2 servings


    • 4 Jumbo Prawns
    • 2 tbsp Cooking oil

    For the first Marinade
    • Sea Salt (a pinch or two) or to taste
    • 2 Tbsp Lemon Juice

    Second Marinade

    • 1/4 tsp Turmeric
    • 1/4 tsp Chili Powder
    • 1 tsp Ajwain
    • 1/2 cup Yoghurt
    • For the Mango Mix
    • 1 cup semi Raw Mango cut into 1 cm cubes
    • 1 green chilly (optional) cut into thin slices
    • A few sprigs of coriander leaves
    • A few sprigs of Mint leaves
    • 1/2 cup spring onion
    • 1 Tbsp Lemon juice
    • A pinch of Sea Salt or to taste

    Directions

    1. Make sure when you buy fresh Prawns the head armor is still hard, that a sign for the catch being fresh.
    2. De-vein the Prawns; leave the tail as that looks good in presentation. Put these cleaned prawns in a bowl and pour over the lemon juice and sea salt. Coat well in the Juice and keep for 10 to 15 minutes. This kills any smell that Prawns have.
    3. Next add all the ingredients for the second marinade. Take the Prawns from the first marinade and to this Marinade, make sure that Prawns are well covered from all sides. Keep in this marinade for at least 15 minute.
    4. Take a nonstick griddle or a Tava, pour in oil heat till smoking point and cool (Skip this if using Olive Oil). Heat again this time hot enough but below the smoking point and add the marinated Prawns. Cook Prawns on low heat for 5 to 6 minutes on each side then cover and cook for 5 minutes. Check for if the Prawns. Remove from fire and present it on a bed of Mango mix.
    5. A great variation to this recipe is to grill Prawns over a Charcoal grill or Tandoor. This gives Prawns a smoky flavor.

    7. Mix all the ingredients for Mango mix in a bowl, check for seasoning and serve. This can accompany any other dish too.
