Mashed potato

Simple and easy, yet tasty

Can use coconut milk in stead of the cornflour-milk mixture for a richer taste

Ingredients vegetarian 4 servings


    • 4 medium-sized potatoes
    • 1 medium sized onion
    • 1 inch piece of ginger
    • 3-4 green chillies
    • 5-6 curry leaves
    • 1 tsp mustard seeds
    • 1 tsp jeera
    • 1 tsp corn flour
    • 1/2 cup milk
    • 1/2 tsp turmeric powder
    • 1-1/2 tbsp of oil[preferably coconut]
    • Salt to taste.

    Directions

    1. Pressure cook, peel and mash the potatoes while they are hot
    2. Heat the oil in a pan, splutter in the mustard, jeera and the curry leaves
    3. 3. Stir in thinly sliced onion, green chillies, grated ginger, salt and turmeric powder
    4. Add the mashed potatoes to the onion and coat it well with the masala
    5. Let it cook on medium heat for 5 minutes.
    6. Stir in the corn flour with the milk and add the mixture to the mashed potato
    7. Simmer till the gravy thickens
    8. Remove from fire and serve it hot with puri or roti.
