Pumpkin sabzi

Ingredients vegetarian 2 servings


    • 1/2 kg pumpkin cut into 1/2 inch cubes(remove skin)
    • 2 tbsp oil
    • 1/4 tsp fenugreek seeds
    • 1/4 tsp mustard seeds
    • 1/2 tsp cumin seeds
    • 1/2 tsp fennel seeds
    • a pinch of asafoetida
    • 1 whole red chilly
    • 1/4 tsp turmeric pwd
    • 1 tsp red chilly pwd
    • 1 tsp coriander pwd 
    • 1 tsp amchur pwd
    • salt to taste

    Directions

    1. Heat oil in a wok, add whole red chilly + fenugreek seeds + mustard seeds
    2. After crackle, add cumin seeds + fennel seeds + asafoetida
    3. Add pumpkin + salt + turmeric pwd
    4. After 5 min, add red chilly pwd + coriander pwd + amchur pwd
    5. Stir carefully while making.
    6. Serve hot with roti
