Veggie loaf

A very healthy & delicious recipe for those who love Veggies.

Ingredients vegetarian 4 servings


    • 2 potatoes.
    • 1  carrot
    • 1/2 cup cauliflower
    • 1/2 cup zuccni ( Kosa)
    • 1 cup, bell peppers (capsicum), chopped
    • 1/2 cup cooked red kidney beans
    • 1/4 cooked rice
    • 3 tbsp bread crumbs
    • 2 egg
    • 1 clove crushed garilc
    •  1/4 tsp Oregano
    • 2 tbsp tomato ketchup
    • 2 tbsp chopped coriander leaves
    • 2 chopped green chili 

    Directions

    1. In a pot boil all the stared veggies until half done. Remove from heat & allow it to cool.
    2. In a mixing bowl add the rest of the ingredients & the veggies & mash with hand & form a dough..
    3. Take a foil & brush with some oil.
    4. Now make a rectangle shape out of the mixture on the foil. Rap the foil from all 4 side & bake in the oven for 30- min.
    5. Open the foil from the top & bake another 20 min to brown from the top.
    6. Remove from heat & allow to cool.
    7. Cut into slices & serve  with your choice of chutney or making sandwiches for kids to take to school.
