A tasty vegetarian snack ,loved by all & easy to prepare
Ingredients
vegetarian 1 servings
4 slices sandwich bread
2 small tomatoes (finely chopped)
1 small potato (boiled & mashed)
1/2 cup onion (finely chopped)
1/2 cup coriander leaves (finely chopped)
2-3 green chillies
2-3 tsp of fresh shredded coconut
Directions
First prepare Tomato sabzi as follows: Heat 2 tsps of oil in a pan. Add mustard seeds, cumin seeds. When they splutter, add a pinch of asafoetido, coriander pwd, garam masala 2 pinches of red chilli pwd, salt as per taste & jaggery (gur).
To this, add finely chopped tomato & cook it very well. Keep aside.
Next Prepare Potato Kachumbar as follows: To the mashed potato add finely chopped onion, 1/2 tsp of chaat masala, salt `n` pepper as per taste.Keep aside.
Then prepare Green Chutney as follows: Grind together green chillies, coriander leaves, coconut cumin seeds, salt as per taste. Keep aside.
Remove the sides of the bread & slightly dampen the slices with water.
Then on 1 slice, evenly apply the prepared tomato sabzi. On another slice evenly apply the potato kachumbar. Then on another one apply green chutney. And lastly place a plain slice on top.
Stack these on 1 another & apply slight pressure so as to bind them.
Dip this in a batter prepared by mixing besan & water & salt as per taste.
Fry the besan coated sandwich in a saucepan. Cut it in to 2 triangles. Serve piping hot with tomato ketchup.
