This dish is an eye taker in parties, it vanishes in no time and if you are making it for your family make sure you make 2 for each person as it's never too much.
Ingredients
non vegetarian 6 servings
6 boneless chicken breasts.
For the marinade:
1/2 tbsp garlic/ginger paste
1/2 tsp salt
1 tbsp vinegar
For stuffing:
1/2 cup soaked and drained burgul or cooked rice of your choice
2 tbsp coriander leaves
1 finely chopped green chilli
1 tsp finely chopped dried apricot
1 tbsp pine nuts
1/2 tsp paprika
1 tsp lemon juice
2 cloves garlic crushed
salt and pepper to your taste
4 tbsp butter/olive oil
Directions
Flatten the breasts between two wax papers and get a nice and thin flat breast.
Marinade the chicken in the marinade for 1 hour.
Combine the stuffing items in a bowl and stuff each marinated chicken with approx 2 tbsp of stuffing.
Roll out each chicken and tie with some thread.
Heat butter in a non stick pan and fry on all side till golden.
Lower the heat and allow it to cook nicely for 20 min.
Remove from heat, take off the threads and cool for 10 min.
Cut out each roll into thick circles, decorate and serve.
