Bottle Gourd & Egg Bhujia

A very different and delicious meal.

Ingredients non vegetarian 4 servings

    • 1/2 kg bottle gourd
    • 2 onions
    • 1 cup chopped tomatoes
    • 1/2 cup chopped coriander leaves
    • 3 chopped green chillies
    • 2 tbsp ginger garlic paste
    • 1 1/2 tsp red chilli powder
    • 1/2 tsp turmeric powder
    • 1 tsp coriander powder
    • 1 tsp white cumin seeds
    • salt to taste
    • 8 tbsp oil
    • 1/2 tsp hot spices powder
    • 3 tbsp milk


    1. Peel bottle gourd and cut into small pieces. Cut onions into thick pieces.
    2. Add milk to the eggs, and whisk.
    3. Heat 2 tbsp oil in a pan and add white cumin seeds.When it gives off aroma, add bottle gourd and fry in on medium flame for 5 minutes.Take it out.
    4. In the same pan ,put the rest of the oil and onions fry till they turn golden brown.
    5. Add ginger garlic paste when it gives aroma add 3 tbsp water,red chilli powder,salt,turmeric powder and coriander powder, mix them together.
    6. Add tomatoes and fry.
    7. Add fried bottle gourd and stir for 2 to 3 minutes.Pour 1/2 cup water, cover with a lid and cook on low flame.When bottle gourd becomes tender, add hot spice powder,green chillies,coriander leaves and beaten eggs.Fry them on high flame.
    8. Tasty loki and anday ki bhujia is ready to serve with puri or parathas.
