yakhni pulao

rice and mutton cooked in mutton stock and exotic spices.

try this delecious yakhni pulao once and you will eat it again and again.

Ingredients non vegetarian 4 servings


    • 1½ cup basmati rice.
    • ½ kg mutton,1 inch pieces.
    • 1 tbsp saunf powder.
    • ½ tbsp soonth.
    • 3-4 cloves.
    • 2-3 black peppercorns.
    • 1 bay leaf.
    • 2 inch cinnamon stick.
    • 1½ tsp caraway seeds.
    • 4 tbsp ghee.
    • 3 cups mutton stock.
    • 1 cup yoghurt.
    • 3-4 green chillies.
    • salt to taste.

    Directions

    1. Soak rice in 3 cup of water for ½ an hour,drain and keep aside.
    2. Marinate mutton with saunf powder, soonth, cloves, peppercorn, cinnamon, bay leaf and salt for 1 hour.
    3. Heat ghee in a pan add caraway seeds and saute for few seconds add the marinated mutton,green chillies and mutton stock.
    4. Bring it to a boil.cover and simmer for 10 minutes. whisk yogurt and slowly add to mutton.
    5. Add soaked rice and mix well.cook on high heat till the mutton and rice is cooked, serve hot.
