Ingredients vegetarian 2 servings


    3 big Potatoes (boiled)
    1 tblsp Vegetable Oil
    1/2 cup chopped Onion
    1 cup coarsely chopped Spinach (Palak)
    1/4 cup grated Paneer (cottage cheese)
    1/4 tsp Ginger Garlic paste
    1 tsp Cumin seeds (jeera)
    a pinch of Asafoetida (hing)
    1/4 tsp Turmeric
    1/2 tsp Cumin powder (jeera)
    1/2 tsp Coriander powder
    1/2 tsp Red chilli powder
    1/2 tsp Garam masala powder
    1/4 tsp Lemon juice
    Salt

    Directions

    1. Dice the potatoes into medium size cubes.
    2. In a pan, heat Oil. Add Cumin seeds & Hing.
    3. Once the seeds turn light brown, add Onion & Ginger garlic paste. Saute till the Onions are soft.
    4. Add in all the Masala powders & fry for 15-20 secs on medium heat.
    5. Add in the diced Potatoes & mix well. Add the Spinach, mix well & cover with a lid for 5 mins.
    6. Add in Salt, Lemon juice & Paneer. Mix for few secs. Turn off the heat, cover for 5-7 mins. Serve hot with Chapati or plain rice.
