Mexican Stuffed Omelette

Stuffed Omelette with cooked vegies and cheese

Ingredients non vegetarian 2 servings


    Omelette

    • 4 Eggs
    • 2 tbsp Milk 
    • 4 tbsp Butter/Fat
    • A pinch of Salt
    • ¼ tbsp Pepper

    Stuffing

    • ¼ cup Chopped Onion
    • ¼ cup Chapped Tomatoes
    • ¼ cup Green Pepper
    • 2 Green Chillies
    • 25 g Grated Cheese
    • ¼ cup Mushroom (Optional)
    • 1 tbsp Red Chilli Paste
    • ½ tbsp Honey
    • 4 Cloves
    • Salt & Pepper to taste

    Directions

    1. Take a bowl and put whole eggs(4 NO).
    2. Add 2 tbsp of Milk
    3. Add Salt and Pepper as per taste and Whisk nicely until the quantity doubles.
    4. Now Keep this a Side and prepare for the Stuffing.

    Stuffing

    1. Take a Pan on  low fire and add 2tbsp of butter/fat.
    2. Add cloves and chopped Onions and saute it until slightly brown.
    3. Add green chilles(Slit)
    4. Now add green peper, mashrooms and saute for 2 min
    5. Add tomatos and saute for another 1 Min.
    6. Now Add red chilli paste, Honey and seasoning.

    Final Preparation

    1. Take a pre heated pan and add 2tbsp butter/fat
    2. Add Egg Mixture and spread all over the pan.
    3. Now arrange the stuffing on the half side of omelette.
    4. Now add grated cheese on the stuffing and fold the other half
    5. Keep the lid for 30 Sec so that the cheese gets melted and stcks the other half
    6. Now Our Mexican Stuffed omelete is ready to serve.

    4 tblsp of butter/fat in this recipe seems a lot, why not use half the quantity and for the omlette, spray coat the pan with oil. I'll give this a try, it sounds good.

    This variation of Omelette sounds really good. But, in the mean time, I try to avoid preparing recipes that call for too much of oil/fat to make them. Nevertheless, thanks for posting this recipe though. Good Luck.
