It is a typical Persian dish of dal cooked with vegetables. Very delicious and chatpata. It can be either made with or without chicken/mutton. Goes well with rice. This is a vegetarian version.
Ingredients
vegetarian 2 servings
1/2 cup Tuvar dal
3 small Brinjals (aka eggplants or aubergines)
250 g pumpkin
1 tomato, chopped
1 med. onion, chopped
1 tsp. ginger-garlic paste
½ tsp. turmeric powder
salt to taste
1 tbsp. coriander-cummin powder
½ tsp. pepper powder
½ tsp. red chili powder
½ tsp. garam masala powder
1 tbsp. tamarind paste mixed with 1/2 cup water
2 tbsp. coriander leaves, chopped
2 tbsp. mint leaves, chopped
2 tbsp. oil
Directions
Boil the Tuvar dal along with the brinjals and pumpkin. Mash well. Keep aside.
Heat oil in a pan and fry the onion first till light brown. Add the ginger-garlic paste followed by the tomatoes.
Fry well till the tomatoes are well mashed. Now add all the powdered masalas including salt mixed with a little water.
Saute till it leaves the sides of the pan. Now add the cooked dal, tamarind water, coriander and mint leaves. Water can be added depending on the consistency you require.
Let it come to a boil. Then simmer for 5 minutes. Serve hot with rice.
