Pressure cook vegetables and keep aside.
Heat oil in a pan add add onions, when onion gets brown add ginger garlic paste, salt and masalas.
Add coconut and fry in low flame till coconut turns brown.
Let this mixture cool down, make a paste of this in grinder.
Heat pan add vegetables and this coconut paste and cook for 2 mins, till the vegetables absorb the masala
Lower the flame and add coconut milk, cook till it comes to boil.
Serve at room temperature
