Sooji Barfi

Easy to make semolina barfis

These easy to make barfis can be made quickly as a simple yet tasty sweet-dish. In Bengal, we even offer it as bhog to the Gods.

Ingredients vegetarian 10 servings


    • 1 cup Sooji
    • 1 cup Sugar
    • 500 ml Milk 
    • ½ cup Ghee 
    • 3 Green Cardamoms, ground
    • 1 Green Cardamom , whole
    • ½ tsp Aniseed 
    • 1 Bay leaf
    • Kismis, Kaju(halved),
    • Cherry(quartered),
    • Black cardamom seeds - for decoration

    Directions

    1. Boil the milk after adding one green cardamom to it. Keep it aside but don't let it cool.
    2. Heat the ghee in a wok. Add the sooji, sugar and bay leaf to it and keep stir- frying it.
    3. When the sooji changes color and releases a flavor, add the aniseed to it.
    4. Now pour the warm milk onto the sooji slowly and keep stirring so that no lumps are formed.
    5. Continue to stir till the mixture becomes thick.
    6. Add the powdered green cardamoms and mix well. Then remove from fire.
    7. Pour the mixture onto a buttered dish with high edges after removing the bay leaf. Let it cool.
    8. The mixture will set and then barfis can be cut from it.
    9. Decorate each barfi with kismis, kaju, cherry and black cardamom seeds. Serve cool.
