Lotus root curry

Ingredients vegetarian 4 servings


    Lotus roots 1/2 lb Baking soda 1/4 tsp pinch of Asafetida (hing) Vegetable oil 4 tbsp 1 tsp. Cumin and mustard seeds 2 nos. Onions (medium size) 2 nos. boiled Potatoes 3 nos. Tomatoes 1 tsp. Green chili & Ginger paste 1/2 tsp. Turmeric powder, 1/2 tsp. Red chilli Powder 1 tsp. Garam masala powder, Salt to taste 1/2 tsp. sugar (optional) Coriander Leaves for garnishing

    Directions

    1. First of all wash lotus root (kamal ki dandi) properly and cut into small round pices.
    2. Put this piceses into water and wash it once again. Cook the wash pices in three to four cups of water with salt and soda in the pressure cooker for about 10 to 15 minutes till it is cooked and soft.
    3. Take tomato and put it into the boiled water and keep it for 2 miniutes and take it out and put itinto the cold water so that you can easily peel its skin.
    4. Cut tomatoes into small pices and keep it aside.
    5. Cut onion into small pices, and mash the boiled potatoes.
    6. Heat oil in a thick-bottomed pan. Add cumin and mustard seeds, when it crackles put asafetida and add chopped onions and fry till golden brown.
    7. Add ginger and green chill paste, fry 2 minutes,then add choped tometoes.
    8. Add turmuric powder. Saute till tometos are well cooked and oil start to seperate. Add mashed poteto, garam masala powder, red chili powder to this. Adjust seasoning.
    9. Add boiled lotus roots and put some water in that now simmer on very low heat for fifteen minutes.
    10. Garnish it with coriander leaves and serve hot with chapati or rice.
