Chicken Pilav

Ingredients non vegetarian 6 servings

    • 1 Chicken (pieces)
    • 4 tbsp ginger, garlic paste.
    • 2 1/2 cups basmati rice.
    • Salt
    • 2 big onions(sliced)
    • 1 cup corriander leaves.
    • 2 tbsps green chilly paste.
    • Whole Masala(3 tsps jeera, 5-6 cardamoms. 5 sticks cinnamon, few black peppercorns.
    • 2 tbsps ghee and 1 1/2 tbsps oil.
    • 2 potatoes (peeled and cut into pieces)


    1. Wash chicken and boil in 2 cups of water, with salt and 2 tbsps ginger, garlic paste until just soft.
    2. Heat oil, add whole masala, when they start spluttering, add onions, braise till onions turn golden brown.
    3. Add remaining ginger,garlic paste,chilly paste and corriander leaves,saute for 2 mins,add potato pieces, salt and boiled chicken (not the stock) braise on medium heat for 5 mins.
    4. Add stock and water, let it boil, meanwhile wash rice.
    5. When it boils add rice, increase heat mix well and cook till rice almost done and water dried up.
    6. Cover it with foil and put in preheated oven, till dry and rice well cooked.
    7. Serve hot with onion, tomato,chilly and lemon salad.
