Eggplant / Brinjal / Aubergine whatever you call it, it is a marvellous vegetable. This dish is delicious
Ingredients
vegetarian 6 servings
½ kg baigans
½ kg potatoes
2 tsps methi seeds or 2 tbsps methi leaves
2 tsps jeera
3 tomatoes (peeled and chopped)
2 tsps turmeric powder
Salt
1½ tsps garlic paste
3 tbsps oil
4 chopped green chillies
Directions
Cut baigans into pieces, peel potatoes and cut into pieces.
Heat oil, add methi seeds or methi leaves,and jeera, let it splutter, add tomatoes, turmeric, chillies, and garlic, braise on medium heat till tomatoes are pulpy.
Add baigans, potatoes and salt, mix well, reduce heat and cook on low flame stirring occasionally.
Add little water and cook till vegetables done, add more water if very dry.
