Eggplants in curd

Eggplants can also be prepared differently . This recipe is different but tasty.

Ingredients vegetarian 6 servings


    • 2 brinjals ( eggplants/aubergines )
    • 2 tbsp oil
    • 1 cup curd
    • salt and red chilli to taste
    • 1/2 tsp cumin ( jeera ) whole

    Directions

    1. Curt brinjals into rings and soak them in salted water for half an hour .
    2. Fry brinjals till well brown on both sides .
    3. Put them on a flat dish .
    4. Whip curd with salt and red chilli powder .
    5. Cover the brinjals with the curd .
    6. Fry jeera in oil and pour on top .
    7. Garnish with mint and sprinkle some chat masala on it .
