Carrot Delicacy

Recipe by Khushboo Barmeda of Dar es Salaam, TZ

Ingredients vegetarian 2 servings


    • 6 carrots (grated)
    • 1 tbsp ghee
    • 2 tbsp fresh cream
    • 1/2 cup milk
    • sugar to taste
    • 1 tsp vanilla essence
    • pinch of orange food colour

    Directions

    1. Steam the grated carrots in the pressure cooker (do not put water) for 15 minutes.
    2. Heat ghee in a pan, add carrots the keep on stirring for 5 min then add the remaining ingredients and keep on stirring until the mixture becomes thick.
    3. Let it cool and then freeze it.

    Very easy ...surely going to try ...will the colour of the carrots change by putting in pressure cooker ?
