Gravied Vegetables

Mixed vegetables in a spicy gravy

Very tasty....goes well with Chapati, Poori or Plain rice

Ingredients vegetarian 4 servings


    • 1 cup Vegetables(carrot,beans,peas,potato,cayote,soya beans,etc)
    • 1/2 cup Grated Coconut
    • 2 tblsp Dhaliya
    • 4-5 Green chillies
    • 1/4 cup Cilantro(Coriander leaves)
    • 1 sprig Curry leaves
    • 1 tsp Jeera (Cumin seeds)
    • 1 tsp dhaniya (Coriander seeds - optional)
    • 2 tsp Khus-Khus (Poppy seeds)
    • 1 tsp Mustard seeds
    • 2 tsp Vegetable Oil
    • Salt to taste
    • a pinch of Asafoetida(Hing)

    Directions

    1. Cut all the vegetables in small size pieces & boil them with little salt. Keep aside. Donot throw away the water.
    2. Grind all the ingredients except Mustard seeds & Hing with water to a fine paste.
    3. Heat Oil in a kadai, add Hing & Mustard seeds. Once they crackle, add the ground mixture. Bring to a boil stirring constantly as it sticks to the pan. Boil for 2 mins. Gravy gets thickened.
    4. Now add the boiled Vegetables along with the 1 cup of vegetable boiled water & boil for 2 mins.
    5. Add Salt, mix well.
    6. Serve hot with Chapati, Poori or even plain rice.

    NOTE: Consistency should not be too thin or too thick. Can adjust accordingly by adding or reducing water.

    Instead of boiling the mixed vegetables I blanched it in boiling water. This keeps the colour. I followed the rest of the recipe. It is good and tasty. Thanks.

    Hello, Dhaliya is not split chickpea but its broken wheat, I don't understand after adding dhaliya to this recipe, you dont need an accompaniment for it, it will become a meal by itself.

    Daliya is roasted split channa dal. Its also called as Futtanu or Huragadale.
