Sayal Bhaji

Coriander flavored vegetables

It is a yummy coriander paste vegetable

Ingredients vegetarian 2 servings


    • 1 bunch of fresh coriander
    • 3-4 medium size tomatoes
    • 5-6 cloves of garlic
    • 1 inch of ginger
    • 5-6 green chillies
    • 1/4 tsp tumeric pwd
    • 1/4 tsp red chilly pwd
    • 1 tbsp coriander pwd
    • salt to taste
    • 2 medium size potatoes
    • 10-12 lady finger/baby okra
    • oil for frying
    • 2 tbsp for cooking

    Directions

    1. In a food processor add washed  fresh coriander, ginger, garlic, green chillies, tomatoes, turmeric pwd, red chilly pwd, coriander pwd, salt and grind to a semi fine paste.
    2. Make sure the paste is not very fine so it is recommended to grind in a food processor or on a grinding stone.
    3. Peel potatoes, cut them into round slices of 0.2cm, wash and add little salt and keep it for 5mins and  then deep fry.
    4. Wash lady finger/ baby okra, remove stem, give a slit vertically and deep fry.
    5. In a pan add 2 tbsp of oil add grounded paste. Cook till the paste starts leaving oil or the water dries up.
    6. When the paste is cooked add the fried potatoes and baby okra in it.
    7. Add little water and cook for 5mins.
    8. Serve with roti, naan, parantha or kulcha.

    Hi Rajeswari...thx 4 d compliment...no its not necessary to fry them u can just add in the gravy but the only difference is that it takes long to cook and might takes a bit different...but i know so many sindhi's who dont fry...so u can try without frying

    hi chetana i prepared the dish yesterday and my hubby loved it. thnks for sharing the recipe. please teel me when to add the onions, while grinding to the paste, or like a vegetable with potato and okra. also is it necessary to deep fry the vegetables. is there an alternative let me know thnks again bye

    Hi Mamta...yes we do add onion cubes and green chillies....but i wasn't sure if viewers would like that so i have only mentioned potatoes and okra.
