Hara Bhara Pulav

Spicy Pulav made from healthy greens

Bored of eating vegetable pulav...then try this healthy & spicy pulav with lots of greens.

Ingredients vegetarian 4 servings


    •  1 big bunch of Palak(Spinach leaves)
    •  1 cup Green Peas
    • 1/2 cup Mint leaves
    • 1/4 cup Coriander leaves(Cilantro)
    • 5-6 Green chillies
    • 2 pieces Cinnamon
    • 5 Cloves
    • 2 Green Elaichi(Cardamom)
    • 1 Bay leaf
    • 1 Onion chopped
    • 1 tsp Ginger-Garlic paste
    • 1 tsp Jeera(Cumin seeds)
    • 4-5 tblsp Vegetable Oil
    • 2 tsp Garam masala powder
    • Salt to taste
    • 2 cups Basmati Rice
    • Fried Cashwenuts for Garnishing(optional).

    Directions

    1. Make Rice & keep aside to cool.
    2. Blanch Palak in hot water for 2 mins.
    3. Grind the blanched Palak, Mint leaves, Coriander leaves & Green chillies together with little water. 
    4. In a kadai, heat Oil & add Jeera, Cinnamon, Elaichi, Cloves & Bay leaf & fry for 2-3 seconds.
    5. Add chopped Onion & Ginger-Garlic paste. Fry for 4-5 mins.
    6. Now add the Ground mixture & fry for 10 mins untill the gravy is little thick.
    7. Add in boiled Green Peas, Garam masala powder & Salt. Fry for 3-4 mins.
    8. Mix in the pre-cooked Rice well so that the gravy coats all the rice.
    9. Granish with fried Cashwenuts & serve hot with your choice of Raitha.

     

    NOTE: Adjust Green chillies according to your taste. Can add in vegetables like carrot & potato also.
