Coconut Brinjals

Bringals cooked in coconut sauce

This is a delicious dish for brinjal lovers.

Ingredients vegetarian 4 servings


    • 4 medium brinjals (eggplant)
    • salt
    • 1  small coconut
    • 2 whole green chillies
    • 1 lemon.
    • 2 tsps turmeric powder
    • 2 tsps green chilly paste
    • coriander leaves for garnishing
    • 1 small onion(finely chopped) 

    Directions

    1. Grate coconut and extract around 1 cup of thick milk, keep aside, add 1 cup of water and extract second milk. Keep aside.
    2. Peel brinjals, and wash them, put them in a pot with 1/2 cup of water and little salt, bring to boil, until just soft and water dries up.
    3. Add turmeric, whole chillies,green chillies,lemon, onions and second milk. Cook on medium heat turning them for 5 minutes.
    4. Add thick milk, reduce heat and cook till all brinjals well coated and gravy turns thick.
    5. Garnish with coriander leaves.
    6. Serve with rotis,parathas or even steamed rice.
