Recipe by Mrs.Soujanya Hariprasad of Santa Clara, US

Dont know what to do with left over Rice...here it is. Tasty appetizer.

Ingredients vegetarian 2 servings

    • 1 cup Cooked Rice (fresh or left over)
    • 1 big Potato (boiled)
    • 1/2 cup Onion (finely chopped)
    • 2 Green Chillies (finely chopped)
    • 1/2 tsp Garam Masala powder
    • 1/2 tsp Jeera powder (Cumin powder)
    • 1/2 tsp Red chilli powder
    • 1/2 cup Bread Crums
    • 1 tsp Lemon juice
    • 2 tblsp Chopped Coriander (Cilantro)
    • Salt to taste
    • Vegetable Oil for frying.

    1. Finely mash the boiled Potato & boiled Rice.
    2. Mix well all the ingredients except Oil.
    3. Wet your hand with little water & make lemon sized balls of the dough & keep aside.
    4. Heat Oil in a kadai on a medium heat. Add the rice balls & fry till golden brown.
    5. Serve hot with Mint chutney & tomato sauce.

NOTE: Instead of frying, flatten the balls between your palms. Make it like a cutlet & shallow fry on a griddle(tava).

There are better choices. White rice is high in processed carbohydrates and not much else. It's very low in fiber. Chose brown rice instead, which is a whole grain, higher in fiber and vitamins.

    sounds so good.

had invited friends for dinner n had lot of rice left over. did this recipe in pan like cutlet and trust me it was verry good.

great way to use old rice. I disagree with other reviewer who say old rice is bad for health. Its an old Indian myth from days which had no refrigerator. There is no such medical proof that rice, vegetable, meat, daal etc kept in fridge for few days thats not gone bad(smells and taste fresh) is "unhealthy".

Leftover rice always doesnt mean day's old. Anything made in the aftnoon can be used in to prepare the dish as an evening snack.

using leftover rice not very good for health, freshly cooked may be used. tastes fine
