Spinach with Pasta

Pasta made with spinach..can be used as a side dish or main course with garlic

Ingredients vegetarian 2 servings

    • 1 cup Corkscrew pasta
    • 1 bunch Spinach (cut the end part, keep only the leaves)
    • 1 cup milk
    • 2 tbsp Butter
    • 1 tbsp Maida
    • Salt to taste
    • Pepper powder to taste
    • 4 Garlic pods (crushed)
    • 2 green chillies (chopped finely)
    • 1 tbsp Virgin Olive Oil


    1. Take water in a saucepan, add some salt and boil pasta in it till done.
    2. Drain pasta and keep aside. Do not throw away the water in which it is cooked.
    3. Wash the spinach leaves and chop them roughly.
    4. Take olive oil in a pan, add green chillis and garlic to it.
    5. When garlic gets cooked, add the spinach and cook.
    6. Add salt and little pepper powder to this.
    7. Cook till spinach gets done (it will reduce completely in quantity)
    8. Remove from pan. In same pan, add butter. Add maida.
    9. Keep striing slowly on low flame to remove the rawness of maida.
    10. Slowly add cold milk, stirring continuosly. Bring to a boil.This makes the white sauce.
    11. Add cooked pasta to the white sauce.
    12. Add a little water (which was used to cook pasta) if the mixture is too thick.
    13. To this mixture add the spinach.
    14. Check for salt/pepper.
    15. Serve hot with garlic bread.

    Note: You can also add cheese instead of white sauce. I avoid adding cheese due to health reasons. White sauce is a good substitute for similar taste.

    I think evaporated milk will change the color and taste a little bit. Fresh milk is better..it's a small quantity
