Malai Kulfi

Tempting Indian ice-cream made easy

This tastes like the traditional kulfi but is extremely easy to make.

Ingredients vegetarian 4 servings


    • 1 cup Condensed Milk (one small can of Milkmaid - use fat-free if you want)
    • 1 1/4 cup Evaporated Milk
    • 1 pack (8 ounce) Whipped Cream Topping (you can use fat-free for less fat)
    • 2 Slices of Wheat or White Bread
    • Powdered Cardamom (Elaichi) - to sprinkle
    • Almonds or Pista - Cut in thin strips (optional)

    Directions

    1. Thaw the whipped cream for sometime.
    2. Remove the sides of the bread and cut in small pieces.
    3. Mix condensed milk, evaporated milk, whipped cream, bread, elaichi powder in a mixer/blender, so everything mixes well.
    4. Pour out in a container or ice cube tray or kulfi cone moulds and garnish with dry-fruits if required.
    5. Deep-freeze overnight.
    6. Yummy kulfi is ready.

    Note: The evaporated milk gives the malai color and taste. Adjust condensed milk quantity as per your liking of sweetness. This kulfi can be stored for 2 months easily in the freezer.

    Bread will help thicken and not form ice crystals when you freeze.

    Ami: You add bread to thicken the kulfi and reduce ice cystals, which can form in freezer. Geeta: Evaporated milk is ready-made in stores. It's mostly a little fat free version of unsweetened condensed milk

    evaporation means to vapourize( to lose moisture as vapour).
