Spicy Egg Platter

I have served this recipe to many guests and the appreciation rate has been overwhelming. It has a blend of Indian spice and Chinese flavour.

Ingredients non vegetarian 4 servings

  • 6 nos. Egg
  • 1 no. Capsicum, green, large, diced into small cubes
  • 1 tsp Ginger, paste
  • 2 nos. Tomato, diced
  • 1 no. Onion, chopped
  • Coriander leaves for garnishing
  • 1 tbsp Soy Sauce
  • 1 tsp All spice powder
  • 1 pinch Food Color, red
  • Vegetable Oil for frying

Directions

  1. Beat the egges and keep aside.
  2. In a flat pan, saute chopped onions on high heat.
  3. After two minutes add ginger paste, soya sauce and chopped green pepper and tomatoes.
  4. Continue to stir fry until oil begins to seperate from the mixture.
  5. Remove mixture from the pan and allow to cool to room temperature.
  6. Add the sauted mixture (after it is relatively cool) to the eggs.
  7. Add salt and mix.
  8. Fry portions of the mixture to get pan-cake sized omlettes.
  9. Garnish with fresh coriander and serve hot with mint chutney and slices of bread.

Liked the aforesaid recipie, but are the eggs to be boiled or what, as you have mentioned beat the eggs. Send your advise ASAP

you have mentioned red color in your recipe but you forgot to mention when and how to add the color in your recepie.
