Fasty, tasty, yummy vegetarian paratha

Ingredients vegetarian 2 servings

    • 200 gm maida (white flour)
    • Sufficient water to make soft dough
    • 2 green cucumbers
    • 100 gm coconut (crushed)
    • 1 cm pc. of ginger
    • 4-5 garlic flakes (crushed)
    • 1 green chilli
    • 2 tsp. Vegetable oil
    • Salt to taste

    Directions

    1. Make soft dough of maida, add salt and ½ tsp oil to it.
    2. Grind the garlic, cucumbers and coconut separately, add salt to taste and mix them well.
    3. Add chopped green chillis and crushed ginger to it, mix the batter well.
    4. Roll out a portion of dough into a chapati and place a part of the mixture in the central part of that.
    5. Spread the mixture in the central part in a square shape.
    6. Now fold the sides of the round chapatti in a square shape (from the four corners) that the batter inside is fully covered.
    7. Wet your finger with water and press the corners and edges of the paratha with little pressure to ensure the folds will not open while frying.
    8. Now heat a flat frying pan, add little vegetable oil to that and heat it again.
    9. Now place the paratha on it, when it is half cooked, place the upside down.
    10. Cook them till they take a shade of brown.
    11. Serve hot with curd or any chutni.

I have never seen/heard that coconut is being used in Mughlai paratha. Its a north indian dish and it unheard of that north indian will ever use coconut in paratha.
