Brain masala

a yummy dish with a touch of fenugreek leaves

Ingredients non vegetarian 4 servings


    • 4 brain (goat)
    • 1 large onion thinly sliced
    • 2 medium tomatoes chopped
    • 1 tsp red chilli powder
    • 1/2 tsp turmeric powder
    • 1/4 cup fresh fenugreek leaves (methi)
    • 2 tsp ginger/garlic paste
    • 1/2 cup chopped corriander leaves
    • salt as per taste
    • 3 tbs oil

    Directions

    1. There is an extremely thin layer on brain which should be removed very tactfully holding the brain in your palm.
    2. Clean and wash brain thorougly in such a way that each piece remain intact and does not break into pieces.
    3. Boil brain in 2 cups water adding turmeric powder.Cook till water dries up completely.
    4. Heat oil in a separate pan and add onion. Fry onion till light brown. Add ginger garlic paste.Stir for 20 seconds. Add chilli powder,salt and tomatoes. Stir for 1 min. Add brain and stir lightly, gently breaking each brain into 3-4 pieces. Add fenugreek leaves.
    5. Cover the pan with a lid and let it simmer for 5-7 minutes on a low heat till tomatoes are completely pulpy.
    6. Stir for 1 more min. till oil separates
    7. Pour the content in a dish and decorate with corriander leaves.
    8. Taste great with home made chappatis

    Hi Esther,,,you are right brain should not be bolied,,coz its very soft,,adding whole masalas with onions and after it is dry..add garam masala powder ,braise another 2 mins and add few drops of lemon also..the peculiar smell will vanish. If you want to fry brain ,,then u boil it with ginger ,garlic paste ,and salt, but dont put water.after washing add this ingredients and keep on low heat ,tossing time to time till dry.

    hi Esther,may be u prefer brain cooked in d curry but brain has a very peculiar smell n if we boil it in turmeric powder dat smells go away....my granny used to make brain cutlets n were an absolute hit!!!!

    great dish ate it every week when we were kids. theres no need to boil the brain seperately just add it the curry and cook the brain absorbs the flavour of the methi and is just yummy.
