Veggie Spirals Pasta

Hearty and Comforting Italian favorites

It’s hearty and comforting Italian favorites, but it's ready in a fraction of the time and with much less effort.

Ingredients vegetarian 2 servings


    For Sauce

    • 3 cups Spiral Pasta (preferably Rainbow Color)
    • 1 nos. medium Onions (chopped)
    • 2 cups/one can Roasted Tomato Puree/ Paste /Sauce
    • Half Red and Yellow Bell Pepper chopped thinly vertically
    • 2 cloves Garlic (chopped)
    • 2 no. Green Chilies chopped (Number can vary according to taste)
    • Salt to taste
    • ½ tsp. Red Chili Powder
    • 2 tsp. Vegetable Oil / Extra Virgin Olive Oil
    • ¼  cup Water


    For Garnishing

    • One finely chopped Green Chili
    • One finely chopped green Onion/Scallions
    • Coriander/Cilantro
    • One finely chopped Tomato
    • One Lemon Zest

        
     For Dressing

    • 3 tsp. Vinegar in which Jalapenos are dipped
    • 1 fresh Lemon Juice

     

    Directions

    Heat a large pot of water to boil for pasta for 10 minutes and add some Salt (only time to flavor the pasta).
    1. Add Pasta and turn heat to low.
    2. Heat Oil in non stick pan on Medium low heat. Add Garlic and Onions.
    3. When the Garlic & Onions turn light brown season salt and red chili powder.
    4. Add Bell Peppers.
    5. Add roasted Tomato Sauce and stir it well let it simmer for 3 mins.
    6. Add Water and stir and bring it to a bubble. (Turn heat to Low and cover the pan)
    7. Drain the Pasta and toss it in the sauce. Stir it well into the sauce so that pasta gets the entire flavor.
    8. Add Pasta in serving bowl and toss with Jalapenos Vinegar and fresh Lemon juice.
    9. Garnish with chopped green Chili, green Onion/Scallions, Coriander/Cilantro, chopped Tomato and Lemon Zest
    10. Quickly divide into individual bowls and Serve bowlfuls of Veggie Spirals Pasta with extra Vinegar on top.

    I tried it....my wife was totally zapped....we just loved it....its also because we are italian food lovers and I keep trying variety of dishes some with recipe's like this and some with trial and error...

    Yes, She will be..if u non veg..thn u can add grilled chicken or shrimps..
