- Combine mangoes,sugar,salt ,black seeds and little water in a large saucepan.
- Bring to a boil over high heat.
- Reduce heat,and boil gently,uncovered, for 20 minutes (stirring occasionally) or until fruit is tender.
- The chutney is done when it has thickened but is still slightly liquid(it thickens further as it cools).
- Add crushed chillies; boil gently for further 5 minutes.
- Add vinegar and remove from heat.
- Cool the chutney slightly, then store in jars.
