Quick sweet for the guests!
Ingredients
vegetarian
2 servings
1 kg White Pumpkin
1 cup Sugar
10 Cashwenuts
10 Dry Grapes
1 tblsp Ghee (clarified butter)
few strands of Saffron
1/4 tsp Cardamom powder
Directions
Remove the skin & spongy part of the Pumpkin completely. Grate & slightly remove the excess water by squeezing it.
Heat Ghee in a kadai, fry Cashwenuts & Dry Grapes. Remove & keep aside.
In the same ghee, add the grated Pumpkin & fry for 10 mins or till soft on Medium heat. All the water should dry.
Now add Sugar, Cardamom powder & Safforn. Mix well for 10 mins.
Add the fried Cashwenuts & Dry grapes. Mix & serve hot or chilled.
