Kashmiri Chicken

Ingredients non vegetarian 4 servings


    • 1 kg chicken
    • 200 gms onions,cut into small pieces
    • 200 gms tomatoes,cut into small pieces
    • 1/2 tbsp chilli powder
    • 3/4 tsp turmeric powder
    • 1/2 tsp pepper powder
    • 5 tbsp curd
    • 50 gms cashewnuts,soaked and groundto a paste
    • 25gms chironji,soakedand ground to a paste
    • 5 tsp oil
    • 2 tsp ginger-garlicpaste
    • 2 bunches fresh corinder
    • 100 gms fresh cream
    • water to cook
    • salt to taste.

    Directions

    1. Heat the oil in a pan.Fry the onions till golden brown. Add chopped tomatoes and fry. Add chilli powder, turmeric, salt, curd, ginger-garlic paste and fry for a while.
    2. Add the chicken pieces and mix minutes add a cup of water, cover and cook for 10-15 minutes or till tender.
    3. Add cashewnut paste,chironji paste and fresh cream. Mix well and simmer for five to eight minutes
    4. Serve with roti or butter naan.

    Hi Gulzar Lakdawala, You will agree that food preparation is a homey affair(even as a commercial activity), in that the objective is to please the near and dear(customers included) ones' palate through palatability and this is achieved in a significant measure through measured quantities of ingredients, although the use of spices is still an art. However, I much appreciate and congratulate you for having used even onions and tomatoes by weight, which, I don't remember that any one else has done so far on Khanakhazana. Having said that, in similar good faith, I would like to draw your attention to the fact that, although you have mentioned fresh corinder as an ingredient(and an important one), it has totally escaped your attention and mention in the directions for preparation. It appears neither as a garnish and nor as a blend item in the recipe. Thus it has dissolved out of your preparation instead of in it. As a result, now I shall have to await anther clarification from you, while waiting for the first one, namely, what "Chironji" is. My palate can now no longer hold back the Kashmiri craving and hence please do the needful urgently. Regards.

    Hi Gulzar Lakdawala, Your recipe, besides being easy to prepare appears to be very rich in composition and I am eager to partake of it. Could you please at the earliest, clarify what "Chironji" is? Khanakhazana do not explain it. It could be a food ingredient quite familiar to me, but not the name you mention. Since you have not mentioned it as an optional item, I think that it could be very essential for the desired taste of the preparation. Thanks and regards.
