    • a pinch of saffron or food color
    • 1 tsp of red chilli powder

    Directions

    1. Firstly make a paste of 2 onions, ginger and garlic and then marinate the chichen with the paste ,dahi, garam masala powder, salt and red chillie powder. It will be better if the marination is done in a pressure cooker for atleast 3 hrs.
    2. Now boil enough water in a handi and put into salt, bay leaf and gota garam masala.
    3. After the water starts boiling put the rice into it . wait for 2 min and then stop and drain the water. Rice should be half boiled.
    4. Now put the rice in to presure cooker.
    5. Now deep fry the two remaining sliced onions and put them with oil over the rice in the pressure cooker.
    6. Put 2 tbsp of butter or ghee into the rice.
    7. Dissolve the saffron or color into little bit of milk and put it on the rice.
    8. Lastly give just one whistle of pressure cooker and take out the steam after 2 min.
    9. Your Briyani is ready to be served.

Note: Dont add water in the cooker. chicken will be boiled in dahi.

I would suggest to soak the rice for say 1/2 hr. then drain. Heat a pan and add oil/ghee and whole garam masalas and bay leaves. Add the rice and dry fry it for a couple of minutes. Add to the pressure cooker in which the mutton/chicken is cooking. There should be sufficient liquid to cook the rice. Pressure cook for 2 whistles, then shut off the gas. Top the biryani with fried onions and chopped hard boiled eggs. Give it a try.

Add Biryani Masala instead of Garam Masala . It will turn out to be delicious.
