Mutton - the west bengal way

Ingredients non vegetarian 4 servings

    • 500 gms mutton (cut in medium peices)
    • 4-5 green cardomom
    • 4-5 cloves
    • 2-3 bayleaves
    • 1 small tsp javitri powder
    • 1 small tsp jaiphal powder
    • 100 ml milk
    • 100 gms curd
    • 1.5 tsp garlic paste
    • 1 tsp ginger paster
    • Oil for cooking.
    • Kewara water (optional)


    1. Mix all the ingredients well and let the mutton rest with marinade for about 8 hours or more. It may be allowed to marinate for about a day too. This gives it excellent flavour.
    2. now in a wok take 1 tablespoon ghee and about 2 tablespoons refined oil.
    3. add the mutton only without the marinade.
    4. Fry the mutton until golden brown.
    5. Now add the marinade follwed by 2 cups of water.
    6. Let it simmer for 40 mins or so until tender.
    7. Serve hot with rice. Optional kewra water can be added for flavouring in the end.
