jaiphal and javitri special
500 gms mutton (cut in medium peices)
4-5 green cardomom
1 small tsp javitri powder
1 small tsp jaiphal powder
100 ml milk
100 gms curd
1.5 tsp garlic paste
1 tsp ginger paster
Oil for cooking.
Kewara water (optional)
Mix all the ingredients well and let the mutton rest with marinade for about 8 hours or more. It may be allowed to marinate for about a day too. This gives it excellent flavour.
now in a wok take 1 tablespoon ghee and about 2 tablespoons refined oil.
add the mutton only without the marinade.
Fry the mutton until golden brown.
Now add the marinade follwed by 2 cups of water.
Let it simmer for 40 mins or so until tender.
Serve hot with rice. Optional kewra water can be added for flavouring in the end.
