Thai chicken

Ingredients non vegetarian 4 servings

    • 1 whole chicken cut in pieces
    • half garlic bulb crushed
    • 2 tins coconut milk
    • 4 tablespoons red thai curry paste
    • bunch spring onions
    • 4 tablespoons cooking oil
    • 1 whloe green pepper
    • chopped coriander
    • salt n pepper to taste


    1. wash chicken n leave to drain
    2. in a pan heat oil n add chopped spring onions n diced green pepper
    3. when softened add chicken n garlic n salt. stir fry til slightly browned
    4. add red curry paste n cook for approx 20 mins stiring occaisonally
    5. add coconut milk n half cup of water
    6. boil then simmer til chicken is cooked
    7. add black pepper n garnish with coriander
    8. serve with plain boiled rice
