Ingredients
non vegetarian
4 servings
1 whole chicken cut in pieces
half garlic bulb crushed
2 tins coconut milk
4 tablespoons red thai curry paste
bunch spring onions
4 tablespoons cooking oil
1 whloe green pepper
chopped coriander
salt n pepper to taste
Directions
wash chicken n leave to drain
in a pan heat oil n add chopped spring onions n diced green pepper
when softened add chicken n garlic n salt. stir fry til slightly browned
add red curry paste n cook for approx 20 mins stiring occaisonally
add coconut milk n half cup of water
boil then simmer til chicken is cooked
add black pepper n garnish with coriander
serve with plain boiled rice
