pudhina rice

a quick and easy rice dish

a tasty mint rice so easy to make.....sure kids would love this

Ingredients vegetarian 2 servings


    • 2 cups  cooked rice
    • 1onion cut length wise
    • 1 bunch pudhina
    • 2 green chillies
    • 2 tsp grated cocnut
    • tamarind (marble sized)

    for seasoning

    • 1/2 tsp mustard seeds
    • 1/2 tsp jeera
    • 2 whole red chillies
    • 1/2 tsp urad dhal
    • 1/2 tsp channa dhal
    • 5-6 slit cashew nuts
    • pinch of hing
    • 1/4 tsp turmeric
    • salt to taste

    Directions

    1. grind pudhina leaves,green chillies, coconut and tamarind to paste.
    2. heat oil, season with all the ingredients for seasoning.
    3. fry the onions till light brown
    4. add the grounded paste adding turmeric and hing in the end and stir carefully not allowing it to burn and till oil seperates.
    5. add the cooked rice and stir well till the rice and masala mixes well.
    6. add salt to taste
    7. serve hot with plain dahi or any curd raita
