Capsicum curry with Potatoes stuffing

Healthy, spicy and tasty

Ingredients vegetarian 4 servings

    • 4 medium capsicums
    • 4-5 boiled medium potatoes
    • 5-6 medium tomatoes
    • 3-4 green chilies
    • 8-10 curry leaves
    • 2 tsp red chilly
    • ½ tsp turmeric powder
    • 2 tsp coriander powder
    • 1 tsp ginger garlic past
    • Salt to taste
    • Coriander for garnishing
    • 7-8 tbsp cooking oil



    1. Smash boiled potatoes add green chilies, red chilies; coriander powder, salt, some coriander, and mix all together well keep aside.
    2. Now cut capsicum on the top and clean all the seeds, stuff with the potatoes.
    3. Heat oil in a pan add green chilies, curry leaves, add stuffed capsicum fry in oil for 5-7 min. add remaining potatoes mixture, ground tomatoes, red chilies, turmeric powder, coriander power, stir slowly keep it on low heat for 10 min.
    4. Garnish with coriander leaves.
    5. Serve hot.
