Orange souffle with orange sauce

an excellent and smooth dessert that is good for a big party....

Ingredients non vegetarian 6 servings


    • juice of 1 orange
    • 3 eggs
    • 100 g powdered sugar
    • 50 g fresh cream
    • 1/2 liter milk
    • orange essence(2-3 drops)
    • 15 g gelatin

    For orange sauce

    • 50 g Sugar
    • 2 tsp Orange rind (finely chopped)
    • 2 -3 drop Orange essence
    • 1 pinch of Orange food color
    • 50 ml water

    Directions

    1. Separate egg whites and set aside.
    2. blend the yolks and milk together and cook on low flame to make a custard.
    3. Add half the sugar, fresh cream, essence and blend well adding melted gelatin.
    4. now whip egg white with remaining sugar and fold it into the mixture.
    5. Set in refrigerator for at least 4 hours and serve chilled with orange sauce.
    6. FOR SAUCE:
    7. melt sugar and water in a pan adding orange rind,essence and food colour and stir till the sugar mixture becomes like syrup.
