Chhole (variation)

Basic Chhole

Enjoy it with bhaturas, puri,chapati or rice.

Ingredients vegetarian 6 servings

  • 1 cup Gorbanzo Beans
  • 2 nos. Onion, large, chopped
  • 1 tsp Cumin Seeds
  • 2 nos. Bay leaves
  • 2 tbsps. Ginger, paste
  • 2 tbsps. Garlic, paste
  • 1 tbsp Turmeric Powder
  • 3 tbsps. Coriander powder
  • 1 tbsp Cumin powder
  • 2 tbsps. Red Chili Powder
  • 1 tbsp All spice powder
  • ½ cup Vegetable Oil

For garnishing : Slices of tomatoes, onion rings, lemon slices, chopped coriander and a few whole green chillies.


  1. Soak the channas in water for over night (or at least 4-5 hours in warm water).
  2. Boil in a pressure cooker with salt and water, about 20 to 30 minuts.
  3. Heat oil in a fry pan and add cumin seeds and bay leaves.
  4. Now put garlic paste, onion slices and ginger paste and cook till golden brown.
  5. Add turmeric, coriander, cumin and chilli powder and fry again in medium heat untill oil is seperated from masala.
  6. Now add garam masala and continue cooking about 3-4 minutes.
  7. Add boiled channas and salt (if needed),cook 20 minuts in medium low flame.
  8. Garnish with onion rings, slices of tomatoes, coriander leaves, chillies, and lemons slices.

    serve hot with bhaturas.



If u add gram flour after the onions are golden & roast it for sometime,it will add to the consistency of the dish
