2 cups Basil leaves (roughly chopped or hand torn)
1/4 cup Pine nuts
2-3 Garlic cloves
1 tsp Red Chilli Flakes
1/2 cup Extra Virgin Olive Oil
1/2 cup grated Parmesan cheese
Salt to taste
1 tsp Black pepper powder
Directions
Heat a pan & lightly roast Pine nuts without Oil. Nuts should not burn, it should only change colour.
In a mixer or Food Processor, add Basil leaves, roasted Pine nuts & Garlic. Pulse it for 15 secs.
Add the Cheese & Red chilli flakes & again pulse it for about 15 secs.
Slowly add Olive Oil in a thin stream. The Mixer should be kept ON. Scrape the sides of the mixer, add Salt & Black Pepper powder. Again pulse it about 10 secs.
Remove to a Bowl. Serve it on top of boiled Pasta or butter toasted Bread slices. Can be stored in air tight container in the refridgerator.
Note: If you cannot find Pine nuts, Walnuts can also be used. Roast & Crush them a little before putting into the Mixer.
