Basil Pesto

Blend of Basil leaves & Pine nuts

Ingredients vegetarian 4 servings


    • 2 cups Basil leaves (roughly chopped or hand torn)
    • 1/4 cup Pine nuts
    • 2-3 Garlic cloves
    • 1 tsp Red Chilli Flakes
    • 1/2 cup Extra Virgin Olive Oil
    • 1/2 cup grated Parmesan cheese
    • Salt to taste
    • 1 tsp Black pepper powder

    Directions

    1. Heat a pan & lightly roast Pine nuts without Oil. Nuts should not burn, it should only change colour.
    2. In a mixer or Food Processor, add Basil leaves, roasted Pine nuts & Garlic. Pulse it for 15 secs.
    3. Add the Cheese & Red chilli flakes & again pulse it for about 15 secs.
    4. Slowly add Olive Oil in a thin stream. The Mixer should be kept ON. Scrape the sides of the mixer, add Salt & Black Pepper powder. Again pulse it about 10 secs.
    5. Remove to a Bowl. Serve it on top of boiled Pasta or butter toasted Bread slices. Can be stored in air tight container in the refridgerator.
    6. Note: If you cannot find Pine nuts, Walnuts can also be used. Roast & Crush them a little before putting into the Mixer.

    loved it! It was my first time with pesto sauce but the aromas that came out very amazing!shall be using it for spaghetti n also for bruschetta :)

    Can we use regular cheese instead of parmesan cheese? Can you suggest which extra vergin oil you are using bcz i have never used it.

    Hi Sneha...In ur Mixer or Food Processor u can see a button "Pulse". In this mode, the mixer won't run continueously like in "Grind" mode. Pulse mode is used to lightly grind the ingredients when u don't want them to become a paste at once. This method is known as Pulsing.
