Mullu muruku

Also known as Mullu thenkuzhal. For chakili and snacks,seperate rice is available in stores.Wash the rice and dry it in shade and make nice powder or can use rice flour.Apply oil in the muruku maker so that dough wont stick into it.

Ingredients vegetarian 4 servings


    • 2 Cups Rice Flour
    • 1/4 cup Chana Dal
    • 1/2 cup Split Moong Dal
    • 1 tsp Elaichi Powder
    • Salt, to taste
    • Water for making the dough
    • 2 tsp Ghee
    • Oil, for frying

    Directions

    1. Dry roast Chana dal and moong dal separately in light brownish colour.
    2. Allow it to cool for sometime.Then in the mixer,add both together and powder them. 
    3. Sieve them 2-3 times to get the fine powder.Sieve rice flour also.
    4. In a large bowl,put the rice flour and the powdered dal and add elaichi,ghee and salt.
    5. Mix them by sprinkling water and by adding hot oil and make a soft dough but not loose or so thick.
    6. Heat oil in a deep kadai.put a small piece into it and the dough shd come up.
    7. Take lemon sized dough and put them in the muruku mould (Star shaped plate) and press or squeeze it round shaped.
    8. Don't put above and above,then it won't fry well.
    9. Keep on medium flame.When there is no dough in oil that time keep in low flame.
    10. After the bubbles settle down,turn it to the other side.Remove when it turns golden.
    11. When u put this on the vessel the crispiness sound should come.It means it's fried well.

    Note:while heating oil,add 1 or 2 tbsp to the dough,it will make the muruku crispier.Please do not make more dough at a time.it will become brown while frying.
