Cucumber rice

tastes superb,serves as a good packed lunch

cucumber with coconut gives a good taste. in summer it is good for health ,easy to carry,easy to serve.for four people fried cahew can be added,which is optional

Ingredients vegetarian 4 servings


    • 4  cups  baked rice
    • 1/2 cup  grated coconut
    • 1/2 cup peeled, scrapped cucumber
    • 1 tsp mustard seed
    • 1/2 tsp urad dhal
    • 1 red chilly
    • 1 inch ginger -finely chopped
    • 1 green chilly finely chopped
    • 2 tbsp cooking oil
    • 1 tsp coriander leaves1 tsp curry leaves.
    • salt as desired

    Directions

    1. Spread the baked rice in a plate and allow to cool
    2. heat a pan with the oil,add mustard, urad dhal,red chilly.
    3. add coconut,,stir and after a few seconds add squeesed cucumber, green chilly and ginger and simmer.
    4. when the cucumber is cooked and mixture starts changing the colour, remove from fire
    5. mix this with the rice, without breaking the rice
    6. add required amount of salt
    7. decorate with the leaves.
