cucumber with coconut gives a good taste. in summer it is good for health ,easy to carry,easy to serve.for four people fried cahew can be added,which is optional
Ingredients
vegetarian 4 servings
4 cups baked rice
1/2 cup grated coconut
1/2 cup peeled, scrapped cucumber
1 tsp mustard seed
1/2 tsp urad dhal
1 red chilly
1 inch ginger -finely chopped
1 green chilly finely chopped
2 tbsp cooking oil
1 tsp coriander leaves1 tsp curry leaves.
salt as desired
Directions
Spread the baked rice in a plate and allow to cool
heat a pan with the oil,add mustard, urad dhal,red chilly.
add coconut,,stir and after a few seconds add squeesed cucumber, green chilly and ginger and simmer.
when the cucumber is cooked and mixture starts changing the colour, remove from fire
