Idli

Steamed Rice Cake

Fermentation is the key in making idlis. Another point is the consistency. The mixture should not be either too loose nor too hard.

Ingredients vegetarian 4 servings

  • 1 cup Black gram (split)
  • 2½ cups Rice, (or idli rava)
  • ½ tsp Salt

Directions

  1. Wash and soak the split black gram and rice separately for 8 to 10 hours.
  2. Grind the soaked dal into fine thick paste adding water little at a time. Remove and set aside.
  3. Grind rice into thick and not so fine a paste adding salt and a little water.
  4. Add this to the dal paste and mix together thoroughly.
  5. Allow it to ferment overnight before steaming them.

when u r fermenting a batter overnight . u don't need soda because soda also ferment the batter.

Can anyone tell me how to prepare idlis without using mixer grinder for making Dal Rice paste. Any type of readymade available flour if mixed can we prepare idlis ?

You can as well add blackpepper corns(only 3 to 4 should be added to each idli batter)

how could you make idli without adding soda?

hi everyone, try adding 1/2 cups of poha to the batter while grinding.also reduce the dal rice ratio to 1:4.soak rice for 4hours with 1tbsp methi seeds and dal for not more than 1hour.HAPPY EATING FOLKS!!

for making better rice idli ,u should use sela or idli rice .

If you are in a cold country like US, in winter the fermentation may not occur even if you keep out for 8 to 10 hours. So keep the dal paste in oven and warm it a little bit. Switch off the over after an hour, keep the dal paste over night( 8 - 10 hr).
