Recipe by Maimoona of VIROFLAY, FR
1 cup breadcrumbs
2 cups boiled milk very hot
¼ cup brown sugar
3 eggs beaten
½ cup black currants or raisins
½ cup orange candied peels
Or
Zest of a lemon finely grated
½ tsp salt
½ tsp cinnamon powder
1 tsp baking powder
Soak breadcrumbs in hot milk. Leave for 5 minutes
Add brown sugar, currants, orange peels, salt and cinnamon powder. Mix well.
Add beaten eggs and lastly the baking powder.
Butter a baking dish and fill it with batter upto 2/3.
In a slightly bigger oven dish add boiling water about 1 inch high.
Place the dish with batter into this bigger dish. Check that water level is not too high (in fact it should reach around ½ the height of the dish so that it wouldn’t spill into the pudding mixture).
Place in a preheated oven to 200°C for 30 mins
Then lower the temperature to 180°C and continue baking for 1 to 1 ½ hrs. or till knife inserted comes out clean.
Serve warm with vanilla ice-cream, fresh beaten cream or with a pudding sauce.
