Mustard-Coconut Pumpkin

Pumpkin in Coconut & Mustard gravy

Ingredients vegetarian 2 servings


    • 1 cup  Red Pumpkin pieces
    • 1 chopped Tomato
    • 1 chopped Onion
    • 1 tblsp Tamaring pulp
    • 2 tsp Jaggery

    Grind:

    • 1/2 cup fresh Coconut
    • 2 tsp Cumin seeds (jeera)
    • 1 tsp Coriander seeds
    • 1/2 tsp Methi seeds
    • 6-7 Dry Red chillies

    Tadka:

    • 3 tsp Vegetable Oil
    • 2 tsp Mustard seeds
    • a pinch of asafoetida (hing)
    • 4-5 Curry leaves
    • Salt to taste

     

    Directions

    1. Grind the above mentioned ingredients to a fine paste.
    2. Heat Oil in a kadai, add Mustard seeds, Hing, Onion & Curry leaves. Fry for 2 mins.
    3. Add Pumpkin pieces with 1 cup Water. Boil till soft.
    4. Add Tamarind pulp, Jaggery & ground paste. Boil for 3-4 mins.
    5. Add Tomato & Salt. Boil for 30 secs. Remove fro heat, cover & keep aside for 5 mins. Serve hot with steamed Rice.
