Tomato Omlet (Variation)
Vegetarian version of Besan & Tomato

3/4 cup Besan
1/4 cup Maida
2 tblsp fine Rava
1/4 tsp Turmeric
1 cup chopped Tomato
1 cup chopped Onion
4 finely chopped Green Chillies
1/4 cup chopped Cilantro (coriander leaves)
1/2 cup Vegetable Oil
Salt to taste
Mix Besan, Maida, Rava & Turmeric powder. Add little Salt & make smooth batter. It should be dosa batter consistency.
Heat a non-stick griddle. Pour a ladle of batter & spread it like a dosa but little thick.
On top, spread Onion, Tomato, Green Chillies & Cilantro. Put some oil on top & sides. Turn to the other side and roast for 2 mins. Serve hot with Tomato sauce or any chutney.
